One of the most important nutrients our body needs is protein, essential for creating muscle and other tissue. But as temperatures rise, not every food containing this nutrient is quite so appetising. Here are a few ideas to help you make a protein-rich salad, a light but filling dish that will leave you satisfied. It’s a great alternative for summer; fresh, filling and mouth-watering.

CHICKEN SALAD
Bake or grill the chicken and cut into strips. You could even marinate it in black pepper or a spot of curry powder. Fresh or grated cheese gives extra protein and chopped almonds will add some crunch to liven up every mouthful.  Add to the mix tomato and avocado and dress with olive oil and salt.

BROCCOLI SALAD
There’s no way that we could miss out this broccoli salad from our list; a superfood that is full of benefits which you can pan cook or boil. Include boiled egg and dry fruits and nuts, for that crunchy sensation, and fresh buffalo mozzarella.

LENTIL SALAD
Lentils are very complete pulses and, combined with lamb’s lettuce and raw spinach, they take on a very different crunchy texture.  You can also add a dash of chopped purple onion and walnuts.

Chickpeas are an ideal ingredient for salads. Add onion, avocado and cheese. You could also include fish, a tin of tuna, cooked king prawns, cockles or mussels.
